Homemade Caesar Dressing

Ingredients
  • 3 cloves garlic, minced
  • 1¼ tsp anchovy paste
  • ½ cup freshly grated Parmesan Cheese
  • 2 tbsp lemon juice
  • 1 tsp course grain mustard
  • 1 tsp Worcestershire sauce
  • ½ tsp salt
  • ½ tsp freshly ground black pepper
  • 1 cup mayonnaise
  • ¼ cup extra virgin olive oil
  • For the Croutons:
  • 1 load of sourdough bread
  • 1 tsp garlic powder
  • 2 tsp Italian Seasoning
Instructions

  2. Slice the bread into eight slices, then cube to desired size. Place bread cubes in a medium deep bowl. In a small bowl add the oil, garlic powder and Kay's lemon pepper seasoning mix. Mix together and toss with the bread cubes.Be gently as to not tear the bread. Spread onto a parchment lined baking sheet in a single layer. Bake at 375 for 15 minutes until nice and golden brown.
  3. In a food processor or medium bowl, whisk together all the ingredients except for the olive oil. Once combined if using a food processor, with the motor running, add in the oil in a stream to let the dressing emulsify together. If you are not using a food processor then slowly stream in the olive oil and use a whisk to combine. Whisk until the oil is mixed throughout and the dressing thickens. Taste and season with extra sea salt and pepper if needed. Store in airtight container in the refrigerator for 3-5 days.
