Roasted Tomato Seven Bean Soup
 
Ingredients
  • 1 pound smoked ham, cut into ¾-inch cubes
  • 6 strips of peppered bacon, chopped (I did large chunks)
  • 4 quarts beef broth
  • ¾ cup dried red kidney beans
  • ¾ cup dried navy beans
  • ½ cup dried pinto beans
  • ½ cup dried baby lima beans
  • ½ cup black beans, canned, drained
  • ½ cup pearl couscous
  • ⅓ cup Worcestershire sauce
  • 1 bay leaf
  • 1 teaspoon ground thyme
  • 1 tsp roasted ground cumin
  • 1 tsp cajun seasoning
  • 1 tsp salt and pepper each
  • 1 tsp chili powder
  • ½ tsp red pepper flakes
  • Hot pepper sauce, to taste
  • Roasted Tomatoes, Onions and Garlic ( toss with the olive oil and roast in oven at 400 for 10-15 minutes)
  • ½ cup chopped onions
  • 1 cup cherry tomatoes
  • 2 cloves garlic, minced
  • 2 TBSP olive oil
Instructions
  1. Combine ham, bacon, beef broth and beans in crock pot or dutch oven. Turn slow cooker on high and add in the remaining ingredients. Cook for 6-8 hours on high. 30 minutes before time to serve the soup, add in the pearl couscous. If you are not using a slow cooker then bring the soup to a boil then reduce heat to medium low and cook for 2-3 hours. The longer it cooks the better it gets!
