Loaded Steak Nachos

Life is busy. I mean not just kind of busy but really busy. At times I find that even though I LOVE TO COOK and I THINK ABOUT COOKING all day-I don’t have the TIME TO COOK. If I find myself not having enough time surely my readers don’t have enough time in the day which leads me to my loaded skirt steak nachos. I know nachos aren’t the first thing that comes to your mind when you think dinner but they should be and can be with this simple and yet delicious recipe. Nachos don’t have to be bad for you. They an actually be healthy and fun with the right ingredients and the right kind of beef!

With my boys in mind, who just adore all things chips, I thought it was fitting to do nachos this week.  Not just any nachos though. Nachos loaded down with 3 different cheeses, seasoned re-fried beans, avocados, salsa and strips of the most fascinating and delicious all-natural steak in the world. IN THE WORLD! IN THE WORLD!

The strip steak is easy. Like seriously easy and it is perfect for nachos. The marinade is basically an amped up chimichurri sauce with hints of smoky chipotle peppers and lime. This is one of those recipes you will find yourself making over and over again and with Summer right around the corner what better time to add another fun party recipe to your repertoire.

Ingredients
  • For the Marinade:
  • 24 ounces E3 Strip Steak
  • 3 limes, juiced
  • 4 tsp minced garlic
  • 1 small can of chipotle peppers in adobe sauce
  • ¼ cup olive oil
  • ⅛ cup of red wine vinegar
  • 1½ tsp salt and pepper each
  • 1 tsp red pepper flakes
  • 1½ tsp chili powder
  • 1 tsp cumin
  • 1 tsp oregano
  • 2 TBSP chopped parsley
  • 2 handfuls of cilantro ( about 4 TBSP chopped cilantro)
  • For the Nachos:
  • 2 onions sliced
  • 2 bell peppers sliced
  • 3 or 4 roma tomatoes diced or 1 can of diced tomatoes
  • blue and yellow corn tortillas
  • 2 avocados
  • 1 lime, juiced
  • 1 cup each of pepper jack cheese, cheddar cheese and
  • your favorite salsa
  • *1 can of seasoned re-fried beans is optional
  • *sour cream is optional
Instructions
  1. Combine of the marinade ingredients (except the steak of course) in a large blender or food processor. Blend until combined. Place the steak in a large ziploc bag and pour the marinade in the bag. Gently turn and rub the steak around the marinade until the steak is evenly coated on all sides:) Refrigerate for 6-8 hours.
  2. Meanwhile, cook your onions and bell pepper in 2 TBSP of olive oil over medium to high heat for 5-7 minutes until nice and tender and slightly charred on the ends. Set aside.
  3. Heat an outdoor grill or an indoor grill pan or skillet. Add 1 TBSP of olive oil to the skillet or grill pan and grill the steak at 350 for 5 minutes on each side (longer depending on the thickness of your steak) Remove steak from grill and allow to rest for 5 minutes before cutting. Cut against the grain into small thin strips that are then cut in half (about 1½ inch wide)
  4. Arrange tortilla chips on a cookie sheet or ovenproof dish/platter. Sprinkle with ½ the cheese, then dab with re-fried beans, sauteed onions and peppers, diced tomatoes, avocado slices, salsa and then the steak. Top it with the remaining cheese and a squeeze of the lime juice. Place in the oven until the cheese melts. Serve immediately with salsa and sour cream. You may or may not need to use all of the meat. If you have leftovers by all means make you some quesadillas or fajitas.

    Sounds delicious Jessica! And perfect for our busy nights, which as you know are more often than not. My kids would love this too…in fact they would find it quite the treat. Honestly, I think I would too-especially with the skirt steak. Yum!
