I love summer time. I love the heat, the summer showers, the smell of sunscreen. I love watching my boys play in the pool and get dirty in the yard. I love the carefree attitude and I love the food! Summertime food calls for something quick and easy. Something that doesn’t require a lot of though or preparation. However, too many people associate quick and easy with boring and tasteless. I am here to prove them wrong with my Crawfish Cornbread Bites. They are loaded with what one would normally find in crawfish etouffee but yet in muffin form. The texture and flavor of the cornbread perfectly compliments the crawfish and leaves you intrigued and wanting more. The key to this dish is taking ingredients from etouffee and adding them to a standard cornbread muffin recipe, giving it more substance and flavor.
The muffins are loaded down with crawfish (of course) diced onions, celery and peppers, garlic and cajun seasoning. The only main thing missing is the tomatoes and trust me after one bite you won’t miss them any longer. The muffins are a cross between a biscuit and cornbread but savory and filling enough to count as your main dish. Serve the Crawfish Etouffee Cornbread Bites with a large tossed salad of your choice or lay them out as the perfect appetizer for your next summer get together! It will be your go-to from here on out!
Going with the summer mentality I am cutting this post. Summer is flying by fast and I want to be outside enjoying it with my boys and eating crawfish cornbread bites not stuck inside at the computer:)) I hope you are all having a wonderful summer and I have so many new and creative things in store for Kitchen Belleicious come the school year- I can’t wait to tell you all about it:)
- 1 cup buttermilk
- ¼ cup whole milk
- 5 TBSP unsalted butter, melted
- 2 eggs, beaten
- 1 pound of crawfish
- 1 cup yellow cornmeal (may also use Gluten Free cornmeal)
- 1 cup flour
- ½ cup sugar
- 1 TBSP baking powder
- ¾ tsp salt
- 1½ tsp cajun seasoning
- ½ tsp oregano
- ½ tsp thyme
- 1 tsp garlic powder
- 1 tsp yellow mustard
- ¼ cup each of diced onions, celery and bell peppers
- dash of hot sauce
- Honey Mustard Dipping Sauce
- ½ cup mayonnaise
- 2 TBSP yellow mustard
- 1 tsp horseradish
- 3 TBSP honey
- ¼ tsp garlic powder
- ½ lemon juiced
- Saute the onions, bell pepper, celery and garlic in 1 TBSP olive oil over medium to high heat for 5-7 minutes. Add in the crawfish tails and cook an additional 5 minutes. Remove and set aside to cool COMPLETELY.
- Meanwhile, combine both milks with the butter, then the egg, hot sauce and mustard. Stir together the dry ingredients (flour, seasonings, cornmeal) and pour in the milk mixture. Combine then add in the crawfish and veggie mixture. Combine until just blended and pour the batter into a greased muffin tin (filling each one ⅔ full). Bake at 375 for 20 minutes. Remove and enjoy while they are hot! (note please at least 5 minutes before trying to transfer them from the pan to a plate).
- For the sauce- combine all ingredients in a small mixing bowl and chill for at least an hour then you may serve:)
Crawfish…when did I last time even have some crawfish? I adore savoury muffins and these sound and look fabulous. I love that dipping sauce too.

I bet these are full of flavor – love the ingredient list and the horseradish in the sauce. I miss those days of hanging with my kids at the pool during the summer. Anything with the Cajun flavours would be a hit up here. These are the perfect little bites to serve with a glass of wine or a mug of beer for the fellows! I bet they would freeze well too.
