Watermelon, Lemon and Lime Popsicles

Nothings says summer than a nice cold refreshing popsicle. Featuring fresh, summertime watermelon these are by far a new favorite for my family and friends and one that is actually 100 percent natural. No sugar-just watermelon, lemon and lime juice!

You can also do the same thing with other soft fruits… just puree them and freeze. Experiment with different fruit combinations… if the fruits are too tart you can always allow them to soak in some sugar before putting them into the blender. For softer popsicles, try mixing in a small amount of yogurt.

Notice anything kinda funny looking about the watermelon in the background. I am not pointing any fingers but I think my watermelon loving son may or may not have had something to do with it! Just sayin……

Watermelon, Lemon and Lime Popsicles
 
Ingredients
  • 3 lemons, juiced
  • 4 cups of watermelon chunks (I just buy the plastic containers with watermelon already seeded and cut)- super easy
  • 2 limes, juiced
Instructions
  1. Place all ingredients in a food processor or blender and blend until nice and smooth. Pour into your desired popsicle molds and freeze for 2-4 hours or overnight.

    I so love how easy and healthy these popsicles are. My kids always ask for a Popsicle when it’s hot out and I hate the choices, as they are full of sugars and dyes. I am so going to make these up.

    I also absolutely LOVE that you froze them in recycled jars instead of the regular old plastic Popsicle trays. Everyone has a glass jar or two at home that they can use up. I have recently been cleaning out all of my jam jars and cute jars to use at glasses. The kids get a kick out of it and why go out and buy a jam jar when you can recycle an actual jar that had jam in it.

    Oh my god, that is so cute (the nibbled watermellon!). It reminds me of when we lived in NYC when my brother was around 2 and I was 4. We’d go to the local bakery with my Mom, brother in the stroller, me walking along side. Mom would buy a French Stick and have my brother hold onto it. By the time we got home, the top would be nibbled off!
